When Great Scott’s Eatery vacated their iconic restaurant, the owner of Smokin’ Dave’s Barbecue saw it as a unique opportunity to expand into the Denver metropolitan area. The design/build contractor hired DMA Engineering to design the front- and back-of-house mechanical systems for the renovation.
After evaluating the existing systems, DMA made recommendations regarding the updates that were needed to optimize service functions and meet current stringent restaurant code requirements.
The selection of new Type 1 hoods and the sizing and design of a new grease interceptor were especially noteworthy items, as DMA was able to utilize a significant portion of the existing infrastructure in the final design.
